Mt. Helena Hiking and Spring Rolls

     This weekend Seth and I went hiking with some friends on Mt. Helena.  It was a killer 5 miler and once we got to the top it was freezing and windy. Poor Seth was just in shorts and a t-shirt.  We had to run halfway down the trail just to warm up.  But it was a gorgeous view and we had quite the adventure looking for caves and doing some free climbing.  Of course I made Seth carry the girly looking pack but that is only because he is the man of the family.

     Then later Seth and I made some delicious spring rolls.  We put celery, green peppers, red peppers, yellow peppers, carrots, cucumbers and cilantro into a delicious combination.  Surprisingly, Seth was not so bad and wrapping.  He said that everything he learned at taco time can still sometimes come in handy.  Spring rolls are definitely one of our new favorites.  Just give us a few more tries to perfect it and then we will be professionals.
